Rose Buns with Raisins

Yuva instant dry yeast 11g

Serves 6
For the dough:

220g flour
20g sugar
125g margarine
11g Yuva Instant Yeast
1 egg
115g milk or water
Zest of a lemon
A pinch of salt
For the custard:
200g milk
100g sugar
32g flour
1 egg
For the filling:
Chopped dried apricots
Chocolate chips
For the glaze:
1 egg yolk
*For the best results, first bring the ingredients to room temperature.

Mix together the ingredients for the custard in a saucepan and cook until the mixture thickens.
Set aside to cool.
Combine all the ingredients for the dough in a large bowl and knead until smooth and as soft as an earlobe.
Cover with a damp cloth and leave to rest for 15 minutes.
Roll out the dough with a rolling pin into an oval shape and spread the custard over it.
Sprinkle with the raisins, finely chopped apricots and chocolate chips. Roll into a long cylinder, and slice into pieces 3cm wide. Lay the pieces on a baking tray.
Set aside to rise for 50-60 minutes at room temperature.
Brush the dough with the egg yolk and bake at 190-200C for 15-20 minutes in a preheated oven.
